Flashback Friday - Gotta’ Love Dessert

This “Unconditional” dessert is for any time you’re feeling loving toward anyone and wish to share that love. It doesn’t have to be Valentine’s Day……….
This is easy, healthy, low natural sugar and dairy free. It will work for Vegans and anyone watching their diet without compromising on fun and flavor. Gotta’ Love That!
PANNA COTTA RECIPE: SERVES 6
INGREDIENTS:
1/4 cup water
1/4 oz vegetarian gelatin
2 cups almond or coconut milk (or coconut cream- my favorite)
1/2 cup reduced balsamic
1/8 tsp sea salt
1/2 cup sliced almonds toasted for garnish (optional)
SAUCE RECIPE
1 1/2 Cups raspberries
1 Tablespoon Monkfruit powdered sugar
1 Tablespoon chia seeds
1/4 cup water
PANNA COTTA METHOD
Place water in a small bowl and sprinkle gelatin on top. Let sit for a few minutes to soften.
Bring almond milk, reduced balsamic and salt to a gentle simmer in medium pot. Remove from heat and stir in 2 TBS into gelatin mixture to temper. Whisk tempered gelatin mix into remaining almond milk mixture to smooth. Cool slightly and divide mixture among 6 heart shaped small dishes or ramekins.
Let cool for 30 mins. Stir to emulsify, cover and refrigerate.
Once it’s set, loosen with a knife, and plate.
SAUCE METHOD
Combine water and chia seeds. Sit for 15 mins to thicken.
Blend raspberries and powdered sugar in blender. Can sieve to remove seeds.
Stir into Chia mixture the raspberry and sugar mixture. Blend well. Taste for ideal sweetness.
Pour onto Panna Cotta.
Serve with toasted almonds on top.
