Best Foot Forward - Granola Recipe

Homemade granola is better than any store bought version. Actually any homemade anything is usually an improvement on eating bought food, because we don’t entirely know how it was prepared, how much care and intention was in the recipes. This recipe is an example of this, with a few simple ingredients and lots of love and care. You can make quite a lot of this and hold it in the fridge for a couple of weeks or so. It’s a healthier snack and can be served with coconut cream like a parfait for breakfast as well.

 Ingredients:

  • 2 cups old fashioned oatmeal

  • 1 cup agave nectar

  • 1 cup cranberries

  • 1 cup raisins

  • 1/2 cup raw apple juice

  • 1/2 cup raw cashews

  • 1/2 cup raw almonds

  • 1/2 cup smart balance

  • 3 Tablespoons brown sugar

 Method:

  •  soak the raisins and cranberries in the apple juice

  • toast the cashews, almonds in the brown sugar and butter to golden

  • Saute the oatmeal with 1/2 cup of the agave nectar to golden

  • Toss all the ingredients together in the pan with the rest of the agave nectar

  • Once together, cool then store in the fridge.
