Possibilities - Eggplant Hoagie Recipe

I have been quite a gypsy in my life to date. At one point I lived and worked in Mt. Shasta, a gorgeous part of the World, with lots of spiritual community seeking enlightenment, not a bad thing to be around. One of my jobs was working at a restaurant that opened all day for breakfast, lunch and dinner. Their Eggplant Hoagie was a favorite with customers. Here’s my very-close-to-theirs recipe.

 Ingredients:

  • 2 medium eggplants (aubergines in UK)

  • 1 cup all purpose flour

  • 3 cups panko breadcrumbs

  • 1 teaspoon Italian dry seasoning

  • 1 teaspoon rosemary garlic dry seasoning

  • 4 eggs

  • olive oil for frying

  • salt and pepper to taste

  • 6 buttered open French Bread rolls

  • 1 cup grated parmesan cheese

  • 1 cup pesto sauce

  • 6 thin slices of parmesan Gouda cheese (Costco’s is lovely)

  • Olive oil for drizzle

  • Fresh basil leaves

  • salt and pepper to taste

 Method:

  •  Slice the eggplants into 1/2” or less slices

  • Season each slice and set aside on a rack to drain for 30 mins

  • Preheat oven to 250

  • warm the eggplant in the oven to dry a little and remove after 20 mins

  • Place the flour in a dish

  • Place the panko, Italian, rosemary garlic dry seasonings combined in a dish

  • In a third dish - whisk eggs with salt and pepper and a tablespoon of water

  • Plop the eggplant slices first in the flour, covering and then shaking off excess

  • Then move the eggplant to the egg, shake off the excess

  • Then drop the eggplant immediately into the panko breadcrumbs.

  • Set aside.

  • Heat up the griddle on medium heat

  • Add olive oil to coat and place each eggplant on.

  • Fry for about 5 -10 mins each side to golden

  • Add more olive oil with each batch

  • Place the eggplants on a tray and season with salt and pepper

  • Clean griddle and olive oil it again

  • Place the buttered French bread butter side down on the griddle to brown
