Blessings - Mum’s Lemon Cake
My mum’s lemon drizzle cake was always so flavorful and moist, that we actually took it to a healing center opening to share with all the visitors and the owner of that center ate the whole thing all by herself. That's how good it was. My mum giggled about that forever.
Here it is (of course you can modify this as a gluten free and low sugar version) - this one is hers with all the eggs and regular flour!
Cake Ingredients:
8oz self raising flour
8oz butter
8oz sugar
1 teaspoon baking powder
2 lemons zest and juice
4 eggs
2 Tablespoons poppy seeds
Drizzle:
2 Tablespoons powdered sugar
juice of 2 lemons
Method:
Preheat oven to 350
Drop all ingredients into a mixer until creamy.
Pour into a buttered or lined tin/s
Bake to golden brown for an hour or less
Take a pot and mix sugar with lemon stirring gently to thick
Prick holes in the cake and drizzle the icing through and on it.
