Spirit Rugalach Recipe

I love baking this recipe in my toaster oven.

It’s basically a cream cheese flaky pastry and oddly it’s very light.

I tend to make a pastry roll and then we eat small slices of heaven which doesn’t feel overwhelming in our mostly clean eating plan. I love having this pastry in my freezer so that at any point I can bake it off fresh as a light snack for guests, or when I have classes that aren’t vegan or gluten free. It would be very easy to create a version of this that can become gluten free. This one is the full version……….

 

Ingredients:

  • 8oz cream cheese at room temperature

  • 1/2 lb butter at room temperature

  • 1/4 cup sugar (plus 9 Tablespoons)

  • 1/4 teaspoons of salt

  • 1 teaspoons vanilla

  • 2 cups of All Purpose Flour

  • 1 1/2 teaspoons cinnamon

  • 1/2 cup preserves

  • 1 egg with 1 Tablespoon of milk for egg wash

  • 3 Tablespoons raisins

  • 1 Tablespoon walnuts

Method:

  • Place the cream cheese and the butter in a mixer

  • Once combined, add 1/4 cup sugar, salt, vanilla, 1/2 teaspoon cinnamon

  • Mix in flour to combine

  • Dump dough onto a floured board and roll flat

  • Wrap in plastic and chill for an hour

Filling:

  • In a bowl combine sugars

  • Add 1/2 teaspoon cinnamon

  • Add raisins and walnuts

  • Remove dough from fridge and make sure it’s flat

  • Spread dough with preserves

  • Add filling

  • Roll dough

  • Sprinkle with sugar

  • Place on parchment

  • Chill 30 mins

  • Heat oven to 350

  • Brush dough with egg wash

  • Bake 15-20 mins

  • Cut into slices and serve.
