Love Strawberry Tartlet Recipe
I love to use what I have whenever I can, it’s more fun and feels like I’m not wasting my resources. Living on Maui is fun and before the island grew so quiet, a sweet flow of visitors would come for sessions, often leaving me the foods they didn’t have a chance to eat. We were given some cereal and I love using it for cake bases. It’s simple and usually sugar and gluten free. The Vitamix pulses it into a powdery submission which then mixed with butter or butter alternatives, makes for a wonderful vegan dessert base.
Once you have that you can plop almost any imaginable dessert in it and get really creative.
This is just one of many ideas………….
Ingredients:
2 cups of cereal
1 cup soft butter
1/4 cup coconut sugar
1 cup of sliced fresh strawberries
1 cup whipped cream or whipped coconut cream
Sprinkles of powdered sugar
Method:
Whir the cereal up in the Vitamix
Remove and mix with the sugar and butter to soft meal.
place in a buttered ramekin or muffin cup for tartlet shell
Bake at 350 for 15 mins to golden brown
cool.
Add whipped cream or coconut cream to shell
Place fresh strawberries in a pattern on top
sprinkle with powdered sugar
