Adoration - Finger Foods Recipe
It’s downright sexy to eat 1-2 bite sized finger foods with someone special, and you can easily go crazy and make lots of food. I am going to share three yummy recipes I cook simply in my toaster oven that are completely vegetarian and can easily slide right into vegan with a little tweaking. Mini Covered
Apple Tart Tatin
Ingredients: (makes 4)
2 small organic apples, sliced thin
1 cup of filo pastry layers
2 Tablespoons coconut sugar
2 teaspoons of agave nectar
1 teaspoon cinnamon
1/2 cup water
1/2 cup butter plus extra for dishes( vegan butter works)
Method:
Place the water in a pot with a lid
Add the apple slices in layers with cinnamon and coconut sugar
Cook on medium heat.
Take a couple of ramekins or muffin cups and line with the extra butter
Place layers of filo pastry in the cups or ramekin and drop butter and cinnamon in each layer
Bake in a toaster oven for 10-15 mins to golden and remove.
cool a little then place the apples in the pastry layers to full
Add more layers of filo pastry on top and cover with butter, cinnamon and a little sugar.
Bake for 10-15 mins until golden brown.
Serve with ice cream, cool whip or coconut cream.
Mini Veggie Quiches
Ingredients: (makes 4)
3 eggs
1/4 cup milk
2 Tablespoons minced parsley
salt and pepper to taste
1 cup filo pastry
1/2 cup of veggie sausage sliced small
1/2 cup mushrooms
1/2 cup onions
olive oil as needed
1 cup grated cheese
1 cup butter
Method:
Break eggs into a jug and whisk
Add the milk and whisk to combine
Add 1/2 the parsley
Sprinkle with salt and pepper and set aside
Heat griddle with olive oil
Place onions and mushrooms on the griddle
Add salt and pepper
Add the rest of the parsley
Add the veggie sausage
When all is turning brown remove in separate dishes to cool
Layer ramekins or muffin cups with butter
Add the filo pastry in layers with butter and salt and pepper
Cook the filo pastry in the oven on 350 for 10-25 mins to golden
Let cool.
Add 1/2 the cheese to the pastry cups
Add the mushrooms and onions
Add the veggie sausage
Add the egg and milk mixture
Add the rest of the cheese.
Bake in the oven for 15-20 mins to golden.
Mini Panna Cotta:
Ingredients:
1 cup sugar
1 teaspoon of lemon or orange flavoring
2 teaspoons of vegetarian gelatin powder
1 teaspoon of vanilla beans powder
1 cup milk (or coconut milk)
1 cup of whipping cream (or heavy coconut cream)
Method:
Dissolve gelatin powder into 2 Tablespoons of water to bloom
Take a pot and add the milk
Add the sugar
Add vanilla bean powder
Add the lemon or orange flavor
Add the cream
Bring to a boil.
Strain into a bowl.
Add the bloomed gelatin to the hot milk and stir in.
Place the bowl over iced water and stir until setting.
Pour into ramekins and chill.
These finger foods are BOMB-DIGGITY!!!
