“Relating” Breakfast Recipe
My darling and I have shifted our relationship to food, even we are self-admitted “foodies” and love to eat. We also love to cook side by side. We have been practicing intermittent fasting and so meals are even more precious these days.
This is one of our favorite breakfast meals and it’s so much better than any breakfast sandwich I’ve eaten in a restaurant - this recipe is for two………………..
Ingredients:
Olive oil to griddle food
1 cup of mushrooms
1 cup of thinly sliced onions
2 split buttered croissants
2 veggie breakfast sausage patties ( we have an awesome recipe if you don’t want to buy them)
2 eggs
1 avocado
1 Tablespoon lime juice
jalapeno salt and ground black pepper
1/4 cup minced cilantro (optional)
Method:
Heat a griddle and sprinkle olive oil on it.
Place the mushrooms and onions on with sprinkles of salt and pepper.
Let them brown a while. Keep turning them as they brown.
Split and butter the croissants.
Place the breakfast patties on the griddle with a little more olive oil.
Flip once they are turning brown.
Place the croissants on the griddle butter side down and a little dab of butter on the top side.
Flip once golden and crisp the top side for a few moments.
Remove the croissants and plate.
Break the eggs onto the grill.
Salt and pepper the eggs.
Cook them to your desire.
Cut the avocado to slices.
Sprinkle the lime juice on the avocado.
Sprinkle the salt and pepper on the avocado.
Place mushrooms and onions on each side of the croissants on the plates.
Clean the plates as you go.
Place the patties on the croissants .
Add the eggs.
Add the avocado slices.
