Opportunity for Pineapple Carrot Muffins Recipe
I love these muffins and there’s usually at least 2-4 of them on hand most weekends. They make a good breakfast or snack item, and are delicious warmed with melted agave or a butter source on them. This recipe is vegan and can be made with one egg if you wish.
Ingredients:
Dry ingredients:
1 cup All Purpose flour
1 cup oatmeal
1/4 cup of almond flour or whole wheat flour
1 cup coconut sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup carrot grated
1/4 cup raisins
1/4 cup seeds and nuts (optional)
Wet Ingredients:
2 Tablespoons of agave nectar
1/4 cup Grapeseed oil
3/4 cup pineapple juice
1/4 cup chopped pineapple
1/2 ramekin of chia seeds soaked in 1/2 ramekin of water
Method:
First soak the chia seeds with the water.
Then add it to a larger vessel and add the oil, the juice, agave and the chopped pineapple.
Mix to blend. Set aside.
Mix all the dry ingredients.
Add the wet to the dry until fully blended.
Pour into muffin cases and bake on 375 for 30 minutes.
Check for doneness and eat warm or cool.
Serve with Butter, Cream Cheese, Organic Coconut Oil or Vegan Butter!!!
