New Beginnings - Vegan French Onion Soup
I love beginning a cosy evening with a warm, hearty soup on a slightly chilly night. There’s nothing more comforting and fulfilling than slurping a rich, thick tasty soup with thick crusty bread. This is one of my favorites and I learned how to make it taste great and it’s easy to be Vegan friendly too.
It’s my pleasure to share this with you…….
Ingredients:
5 large onions, finely sliced
1 cup or so of Olive oil to saute
4 sticks of celery, chopped small
1/2 cup sherry
1/2 cup white wine
1/4 cup marmite or vegemite
1/4 cup water
salt and pepper to your tastes
sprinkling of parsley
sprinkling of garlic powder
2 cloves of already roasted garlic
10 cups of rich vegetable stock
8 slices of french baguette, sliced
1 cup of shredded vegan cheese
Method:
Heat the oil in a pan.
Reduce the heat to medium high
Toss in the onions into the pan with salt, pepper, parsley and garlic powder.
Keep turning them and allow them to slowly turn a golden brown
Add the celery and cook to golden brown
Add the white wine and reduce until it disappears
Add the roasted garlic and cook briefly.
Add the marmite and the water to coat all the vegetables with it
Add the sherry and reduce
Add the vegetable stock and reduce the heat more
Taste and season accordingly
As you prepare to serve….
lightly toast the baguette on both sides to golden
Add shredded cheese to the top layer of the toast.
Serve the hot toast on top of the soup.
