"Lett-Uce" Go For It Salad

This recipe is simple and an easy favorite of mine. I love mixing lettuce and cabbage. The two greens have a different crunch and flavor, and lend themselves to salad rich with fruit and layers of seasoning.

Salads are such a great way to eat your greens and digest the connection with our natural earth. I sometimes serve this salad with a protein, and yet it has so many delicious components that it can stand alone on it’s own merits.

 Ingredients:

  •  2 cups boiled cooled spaghetti noodles,

  • chopped, seasoned with a sprinkle of ginger,

  • teaspoon of soy sauce,

  • 1/2 teaspoon agave nectar, parsley,

  •  salt and pepper

  • 1 cup cabbage, sliced thin

  • 2 cups lettuce, sliced thin

  • 2 celery sticks, chopped small

  • 1 large carrot, chopped small

  • 1 cup fresh pineapple, sliced into rings and chopped

  • 1 medium red apple, cored, deseeded and chopped

  • 2-3 Tablespoons sesame oil dressing (Costco’s is lovely)

  • 1 Tablespoon furikake seasoning

  • 1 Tablespoon salad topper (Costco’s is yummy)

  • 1 Tablespoon fried onions

  • 1 teaspoon sesame seeds

 Method:

  • Layer the noodles first

  • Then add the cabbage

  • Add the celery

  • Add the carrot

  • Add the apple

  • sprinkle 1/2 of the furikake to the apple

  • Then add the lettuce

  • Add the pineapple and the other 1/2 of the furikake

  • Toss with the dressing

  • Add the sesame seeds

  • Serve to individual dishes

  • Add the fried onions

  • Add the salad topper

I have laid out this recipe as I most frequently make it, however, there are many variations that can spring from this amazingly easy centerpiece for a good hearty meal.
