“No Risk“ Amazing Papaya Salad

While deciding which recipe would serve best for this segment, I was challenged with the title of “risk” and couldn’t decide what taking a food chance looked like, because we are so unique with our tastes and flavors. I decided to go in a different direction and choose a real favorite in our little cottage. This is a delicious and complex salad that even with its depth of flavors, is easy to construct and so good!!! Let us know how you do with it and any variables you choose….

Ingredients:

  •  1 papaya (very ripe) or a large naked orange, de seeded, peeled and chopped.

  • 1 large sweet apple, cored and chopped

  • 1 small carrot chopped small

  • 1 cup fresh cabbage sliced thin

  • 1/2 cup fresh lettuce sliced thin

  • 1/4 cup of salad topper (Costco is where I buy this)

  • 1/3 cup sliced Almonds

  • 1/3 cup brown sugar

  • 1/3 cup water

  • 1/3 cup artichoke hearts -chopped (Costco is where I buy the jars)

  • 1/3 cup bread and butter pickled cucumber ( my recipe - easy and please ask)

  • 1/3 cup Reduced Balsamic vinaigrette

  • 1/3 cup olive oil

  • 1/3 cup papaya juice

  • sea salt and pepper

  • Sprinkling of Furikake seasoning

  • 1/4 cup of seaweed salad (Costco is where I buy this)

 Method:

 Dressing:

  • Take a container with a lid and place the papaya juice (or orange juice if thats what you’re using)

  • add the reduced balsamic and olive oil in it with a sprinkle of furikake seasoning, salt and pepper and shake. chill and shake each time before use.

Nuts:

  • Take the almonds and place in a saute pan with the water and brown sugar in it, sprinkle the almonds on and place on a medium to high light, watch this like a hawk, turning and browning until sticky and caramelized. Remove and chill until last - to toss into the salad at at the end.

Body of Salad:

  • Take a large salad bowl and place the lettuce, cabbage, carrot in it

  • Add the artichoke hearts.

  • Add the pickles.

  • Add the apple and papaya.

  • Add the seaweed salad.

  • add the salad topper.

  • add the nuts from the fridge.

  • Toss the whole lot and dress with the dressing shaken.
