Simple “Truth” Chia Seed Pudding

I love a dessert that includes everyone. This one does it every time. It’s simple and honest. It’s dairy free, sugar free and gluten free. It definitely ticks all the healthy honest free foodie boxes that I love. There are so many varieties of this dessert you can create once you have the basics. There’s no limit other than your imagination. Go for it!!!

 Ingredients:

  •  I can of chilled coconut milk

  • 1/2 cup of chia seeds

  • 1 cup of freshly chopped mango

  • 1 Tablespoon of agave honey

 Method:

  •  open can and drop into a good sized bowl.

  • add the chia seeds.

  • Add the mango

  • add the honey

  • Mix completely and place in covered dishes for serving (either individual or one)

  • Allow to chill for at least 2 hours or overnight.

This is really such a simple, yet delicious, dessert that is always a crowd favorite. I have laid out this recipe as I most frequently make it, however, there are many variations that can spring from this beautiful, easy dessert.
