Community - Vegetarian Chili and Cornbread.

There isn’t much more soothing and comforting to share with community than breaking hearty cornbread and dipping it into homemade chili. I don’t do this too often because beans have the potential of explosion factor. However, this is easy and a great comfort food when needed. You can prepare it, leave it and get on with your day, come back and a hearty meal is ready to go.

 Ingredients for Chili:

  •  Salt and pepper for each component

  • Olive oil for saute

  • 1 cup chopped onion

  • 1 cup mushrooms

  • 1 cup red wine

  • 2 cups of 3 Types of cooked beans

  • 3 cups of water

  • 3 cups vegetarian stock

  • 1/2 cup canned tomatoes

  • salt and pepper to taste

  • 1/2 cup brown sugar

  • 1 1/2 cups minced fresh parsley

  • 1 1/2 cups minced fresh cilantro,

  • 2 teaspoons dried oregano

  • 1/2 jalapeno pepper, chopped

  • 1 cup rice to 2 cups boiled water to serve.

 Method for Chili:

  •  Heat oil and saute onion and mushrooms to golden.

  • Add the jalapeño and cook to golden.

  • Add the red wine and reduce.

  • Take an instant pot and place the cooked beans, water, stock, sugar, 1 cup of each of the fresh herbs, and drop the sauted onions, mushrooms and jalapeño in.

  • Cook slow for 3-4 hours.

  • Serve with boiled rice.

 Ingredients for Cornbread:

  •  2 teaspoons apple cider vinegar

  • 2 cups milk

  • 1 1/2 cups finely ground cornmeal

  • 1 cup all purpose flour

  • 1-2 teaspoons baking soda

  • 1 teaspoon salt

  • 6 Tablespoons organic sugar

  • 1/3 cup coconut oil

 Method:

  •  Heat oven to 400.

  • Whisk apple cider and milk vigorously.

  • Set aside.

  • In a large bowl, whisk together cornmeal, flour, baking soda, salt, sugar

  • Mix fully.

  • Pour into 8 x 8 square dish.

  • Bake 35 minutes to firm and golden

  • Cool and cut into square portions
