Creation - Veggie Lasagne Recipe
This is a hearty, filling, delicious meal for anyone who wants to feel the impact of off the charts vegetarian comfort. All is about creative balance and this one is over the top - so you may wish to lighten the menu on the days before and after this one. I do feel this decadence is worth it.
Ingredients:
1/4 cup olive oil
1 medium sweet red pepper, sliced thin
1 medium carrot, sliced thin
1 small onion, sliced thin
5 tomatoes, chopped small
2 cups mushrooms, sliced thin
1 small yellow squash, sliced thin
1 small zucchini, sliced thin
4 garlic cloves, minced
1 can tomato paste
1 cup vegetable broth
1 cup red wine
2 Tablespoons brown sugar
3 teaspoons dried Italian seasoning
2 teaspoons dried basil
2 teaspoons of dried rosemary
salt and pepper to taste on each vegetable
1 packet of lasagne noodles or fresh lasagne ( let me know if you wish for the recipe for this)
1 large egg, beaten
2 cups mozzarella cheese, shredded
1/2 cup parmesan, shredded
1/2 cup ricotta, chopped small
1/2 cup fresh cream
Method:
In a saute pan, with olive oil, cook the onions, mushrooms to golden.
Add the squash, zucchini, garlic, with 1/2 the seasonings.
Add red wine and reduce.
Stir in tomato paste, tomatoes, sugar and seasonings.
Simmer to boil.
Reduce heat. Add stock.
Cook lasagne ( unless fresh)
Heat oven to 350.
Mix the egg, ricotta cheese and cream, with salt and pepper.
Layer lasagne with the egg mix, then veggie mix, then shredded cheeses.
Keep layers going until the dish is full.
Bake for 30-35 minutes until golden and bubbly.
Stand for a few moments before serving.
