Receiving - Golden Sticky Toffee Pudding Recipe
When I was in culinary school my favorite chef instructor asked me to bake this. I was incredibly intimidated and it was a lot of preparation at that time. The original recipe I used took 4 eggs and was delicious but very rich. The chef loved it, and I have since found a lighter version which I’ve modified a little. It’s really good. Make sure you have time to enjoy preparing this or you may get grumpy like I did recently when I made this while a bit droopy from a new exercise routine. It’s very good and worth the trouble…….
The Pudding:
Ingredients:
1 tsp coffee with 1 Tablespoon hot water
6oz pitted dates
3/4 cup water
3/4 cup All Purpose Flour
1 tsp baking powder
1/4 tsp baking soda
pinch sea salt
4 Tablespoons unsalted butter, soft
3/4 cups light brown sugar
1 large egg, beaten with 1/4 tsp vanilla, 1/4 tsp molasses
The Sauce:
2 1/2 cups heavy cream
4 oz unsalted butter
1/2 cup Lyle’s Golden Syrup
1 cup sugar
Method:
Sauce:
In a pot, combine butter, syrup and sugar. Simmer and stir until caramel. Add the 1 1/2 cups of cream, stirring off the heat. Set aside.
Pudding:
Simmer dates in water until soft ( about 15 minutes)
Add coffee and puree in processor until smooth.
Heat oven to 350.
Butter ramekins and chill.
Remove ramekins, add flour and shake out. Chill until ready to use.
Mix together flour, baking powder, baking soda, salt in one bowl.
In another bowl, beat butter with brown sugar until fluffy.
Add the egg mixture to the sugar mixture.
Beat in the date puree mixture into the sugar mixture.
Add the wet bowl to the dry bowl.
Spoon the mixture into ramekins 3/4 way full and smooth tops.
Bake 20 minutes.
Spoon toff syrup over cakes and bake a further 10 minutes.
Cool.
Remove cakes from ramekins and plate
serve with a little more toffee syrup over cream or ice cream.
