Flashback Friday - Vegan Porridge Recipe

It’s lovely to be on purpose and eating well is vital for good health and endurance.
I’ve really enjoyed eating porridge in some of the great places around the World. This is an easy recipe that I can throw together and vary a whole bunch when I need to…………
INGREDIENTS:
2 cups oats
1/2 cup seeds (Costco - salad topper)
1/2 cup cranberries
2 Tablespoons golden raisins
2 cups oat milk
1/4 cup agave nectar
4 Tablespoons coconut sugar, divided into 2
1-2 prunes, chopped very small
1/4 cup sweet coconut, chopped small (topping)
METHOD:
In a pan toast the oats and seeds dry
In a small dish soak the raisins, chopped prunes, cranberries
In a pot heat on medium to high heat - the milk
Add 2 Tablespoons sugar and melt
Add the toasted oats and soaked fruit to nice thick porridge
mix well
Sprinkle the sugar on top
Serve with sweet coconut on top
