Flashback Friday - Veggie Wellie Recipe

Beef Wellington is a well known British recipe, that’s quite popular. I have a vegetarian version I really like a whole bunch. I call it Veggie Wellie (Wellie is short for wellington which are rain boots - wellington boots) - cute Brit sayings…………Yummy recipe, not so tough to make.

 INGREDIENTS:

 Veggie burger;

  •  1/4 cup olive oil

  • salt and pepper to taste

  • Minced onion

  • 1/4 cup red pepper minced

  • 1/4 cup green pepper minced

  • 2 teaspoons Beet powder

  • 1 heaped teaspoon marmite or vegemite

  • 1/4 cup veg stock

  • 1/4 cup black beans ground to paste

  • 2 Tablespoons cilantro

  • 1/4 cup red wine

 METHOD;

  •  Heat oil and place onion, peppers, salt and pepper in pan

  • Saute to golden

  • Add the red wine and reduce almost completely

  • Add the stock and reduce almost completely

  • Remove from heat

  • Add the marmite and mix in well

  • Bring mix to the black beans paste and mix

  • Add the cilantro

  • Add the beet powder and bring together

  • Chill until ready to drop into pastry base.

 INGREDIENTS:

Veggie topping;

  •  1/2 cup onions minced

  • 1/2 cup carrots minced

  • 1/2 cup celery minced

  • 1/2 cup olive oil

  • salt and pepper to taste

  • 2 Tablespoons fresh cilantro minced

  • 2 Tablespoons fresh parsley minced

  • 1/2 cup white wine 

 METHOD;

  •  Saute the onions, carrots and celery with salt and pepper to golden.

  • Add the white wine and reduce completely.

  • Add the herbs to mix.

  • Remove from heat and prepare to add to the top of veggie burger in pastry base

 INGREDIENTS:

Pastry;

  •  4 sheets of Filo dough pastry

  • 1/2 cup Butter to dollop on each layer

  • salt and pepper to sprinkle on each layer

METHOD;

  • Prepare 2 layers with butter, salt and pepper into baking dish

  • Prebake on 375 for 15 minutes to golden

  • Cool and prepare to fill with veggie burger

  • mushroom and onion mix

  • Top with layer of pastry and bake for another 15 mins on 375

  • Cool slightly and serve with a side salad or rice
