Freedom Friday Flashback - Laughter - Trifle recipe

When you think of laughter, you can imagine bellies jiggling with joy and that goes well with trifle. This is a real British traditional party recipe. It began with a fruit mousse made with thick cream, probably clotted cream.

Trifle consists of jiggly jelly (jello in the U.S.A) then custard, then cream and sprinkles (known as hundreds and thousands in the UK.) When I first came to the U.S.A I learned quickly that we describe aspects of everyday life quite differently. This caused so much laughter and a little frustration.

This colorful and fun recipe is a great potluck item to bring and can be modified easily to be completely vegetarian or even vegan. It’s very, fun and delicious. It will take time due to the setting of each layer, and it’s well worth it. This one is vegetarian as the jello is made with vegetarian jello and the gelatin isn’t made with animal product.

 BOTTOM LAYER:

INGREDIENTS:

  •  Shortbread or sponge cake

  • 1/4 cup fresh berries of choice (not juicy)

  • Packet of red veggie jello

  • Packet of green veggie jello

 METHOD:

  • Place shortbread or sponge cake at the bottom of the serving dish you’re going to use

  • Pour the layer of jello on top - following directions and let set. Chill

  • Once top layer is set, pour next layer on once cool and allow that to set.

 CUSTARD LAYER:

INGREDIENTS:

  •  1 cup coconut cream

  • 4 egg yolks

  • 4 teaspoon lemon zest

  • 2 teaspoons lemon juice

  • 2 teaspoons agave nectar

 METHOD:

  • Fill a pot half full with water, simmer.

  • With a bowl on top, whisk lemon zest, juice, egg yolks, and agave nectar

  • Whisk until custard forms - about 10 mins

  • Pour into bowl - don’t scrape the sides.

  • Cover with plastic so no skin forms

  • cool for 2-3 hours in fridge

  • Pour onto top layer of set jello.

 TOP LAYER OF CREAM:

INGREDIENTS:

  •  1 cup coconut cream, whipped to a frenzy

  • 1-2 teaspoons of sprinkles at time of service only.

TOP IT OFF AND ——- ENJOY!!
