“Fire of God” Sweet Potato Casserole Recipe

Our cottage life has become very Vegan in lifestyle and food. My darling and I are both foodies and to become Vegan seems like a huge leap, and yet it isn’t. We have lots of herbs and spices, and we create recipes similar to those in regular recipes, with lots of tweaks to make it delicious and more fun. We won’t be pasty, hungry vegans. We are going to love food this way as much as we did the less healthy and plant-based way. This is a potato casserole with orange sweet potatoes and it’s really good…….

 Ingredients:

  • 4 orange sweet potatoes, peeled

  • salt and pepper to taste

  • 6-8 garlic cloves, minced

  • 1/2 cup fresh cilantro, minced

  • 1/2 cup fresh dill, minced

  • 3 Tablespoons dried Italian herbs

  • 1 can coconut cream, stirred to remove lumps

Method:

  • Mandolin the sweet potatoes into thin slices

  • Line a square dish with some of the coconut milk

  • sprinkle salt, pepper, garlic and all the herbs on top

  • Add a row of sweet potatoes

  • Add more of the coconut milk

  • Repeat until the dish is full

  • Bake in a preheated oven at 350 for 45 mins to 1 hour
