Sweet Life - Vegan Berry Cream Pie Recipe

Life is sweet and dessert isn’t needed every day, however, some days you simply have to eat dessert. This recipe is healthy and Vegan - it helps with that day…..

Ingredients:

  • 3/4 cup Medjool dates, pitted, soaked in hot water for 5-10 mins and drained

  • 3/4 cup cashews or almonds, chopped

  • 1/4 cup shredded coconut

  • 1 - 14oz can coconut cream, chilled

  • 2 Tablespoons agave nectar

  • 1 Tablespoon pure vanilla

  • 1lb berries

  • 1/4 cup toasted coconut for topping

  • 1/4 cup toasted nuts for topping

Method:

  • Process dates, coconut, cashews in the processor

  • Line an 8” dish with plastic wrap

  • Place the processed mix inside the wrap

  • Spread it along bottom and up sides

  • Freeze

  • Remove coconut cream into mixer bowl

  • Add agave

  • Add vanilla

  • Mix to combine

  • Remove pie from freezer

  • Pour filling into crust

  • Spread evenly

  • Freeze 15 mins

  • Remove from freezer

  • Pull out of wrap

  • Place onto serving plate

  • Top with coconut and nuts

  • Serve
