Sweet Life - Vegan Berry Cream Pie Recipe

Ingredients:
3/4 cup Medjool dates, pitted, soaked in hot water for 5-10 mins and drained
3/4 cup cashews or almonds, chopped
1/4 cup shredded coconut
1 - 14oz can coconut cream, chilled
2 Tablespoons agave nectar
1 Tablespoon pure vanilla
1lb berries
1/4 cup toasted coconut for topping
1/4 cup toasted nuts for topping
Method:
Process dates, coconut, cashews in the processor
Line an 8” dish with plastic wrap
Place the processed mix inside the wrap
Spread it along bottom and up sides
Freeze
Remove coconut cream into mixer bowl
Add agave
Add vanilla
Mix to combine
Remove pie from freezer
Pour filling into crust
Spread evenly
Freeze 15 mins
Remove from freezer
Pull out of wrap
Place onto serving plate
Top with coconut and nuts
Serve
