Share - Tapas Recipe

Sharing feels like a party or a community event. These two tapas recipes are just two of many recipes that are wonderful served in a shared way. Snacks and finger foods allow us to be social and eat as light as the sweet conversation flows………….

Ingredients:

Stuffed mushrooms:

  • 1 box crimini mushrooms, cleaned, stalks removed and chopped small

  • 1/2 onion, chopped small

  • 1 cup white wine

  • 1/2 cup vegetable stock

  • 1/2 cup fresh cilantro, minced

  • 1/4 cup fresh parsley, minced

  • salt and pepper to taste

  • 1/2 cup brewers yeast

  • 1/4 cup cashews, minced

Method:

  • Heat toaster oven to 350

  • Place mushrooms inside up on a baking tray to bake 15-20 mins

  • Remove and cool

  • Sauté chopped mushroom stalks and onions in veggie stock

  • Add salt and pepper

  • Add white wine and reduce

  • Add cashews and toast briefly

  • Remove from heat

  • Add immediately the cilantro

  • Add the parsley

  • Combine to thick

  • Cool

  • Fill baked mushrooms with cooked mushroom mixture

  • Add Brewers yeast and bake 10 mins on 350

  • Serve

 

 Potato Croquettes:

 Ingredients:

  • 4 potatoes, peeled, cut and boiled

  • salt and pepper to taste

  • 1/2 cup minced dill

  • 1/4 cup vegan liquid cheese *

  • 1/2 cup brewers yeast

  • 1/2 cup cashew vegan parmesan *

Method:

  • Mash the potatoes while still warm

  • Add the salt and pepper

  • Add the minced dill

  • Add the vegan liquid cheese

  • Roll into balls

  • Roll potato balls in the cashew vegan parmesan

  • Sprinkle the brewers yeast onto the balls

  • Chill

  • Bake on 350 to golden and serve
