Discovery - Layered Nachos Recipe

It doesn’t have to be a party that’s being thrown for a layered dip to be an appropriate and delicious snack or meal. This served with a game or a movie is awesome, colorful and fun.

You can make this really healthy and vegan with creamy golden cheese too. (This one isn’t vegan, and yet is still much healthier than many store bought versions).

 

Ingredients:

  • 1/2 Bag Organic Corn Chips

  • 1 cup sour cream

  • 1 avocado, sliced and cut

  • 2 teaspoons lemon juice

  • salt and pepper to taste

  • 1/2 cup minced cilantro

  • 1 cup chopped organic lettuce

  • 1/2 cup chopped spinach

  • 1/4 cup Mexican mixed cheese

  • 1/4 cup refried beans or black beans

Salsa:

  • 1/4 cup tomatoes, chopped small

  • 2 Tablespoons capers

  •  1/4 cup raw red onions, chopped small

  • 2 Tablespoons cilantro

  • 2 slices Jalapeños pepper, chopped small

Method:

  • Preheat oven to 350.

  • Mix the salsa ingredients together and set aside

  • Take the organic corn chips and place on a silpat baking mat or parchment on a tray

  • Add the cheese, sprinkled all the way over the chips

  • Sprinkle the refried or black beans over the cheese and chips

  • Place in the oven for 15 mins or until melty and browned

  • Add the lettuce

  • Add the spinach

  • Add the cilantro

  • Add drops of the salsa

  • Add drops of the sour cream

  • Sprinkle salt and pepper to taste

  • Sprinkle lemon juice, salt and pepper onto the Avocado

  • Add the Avocado evenly over all the other ingredients

Serve as a snack or a meal.
