Fun, Creative, Optimistic - Vegan Tofu Chow Mein Recipe

Enjoying Vegan delicious food in our little cozy cottage continues to be delightful. We are both becoming lighter and healthier.

This recipe is a fairly new one and you can change it up quite a bit, even while it’s good just as it is……..

Ingredients:

  • 2 cups rice noodles

  • 3 cups fresh mixed mushrooms

  • 1 medium red pepper, chopped small

  • 1 Large carrot julienned

  • 1 medium yellow onion julienned

  • 1 cup celery cut on the bias

  • 1 cup broccoli flowerets

  • 10 baby corn cut in half

  • 1 can bamboo shoots

  • 2 cups mung bean sprouts

  • 1/4 cup Braggs liquid

  • 1/4 cup soy sauce

  • 3 green onions, chopped small

  • 1 pack of extra firm tofu (dried and chilled)

  • 1/2 cup vegetable stock

  • 1/4 cup miso paste

  • 1/4 cup minced fresh basil

  • salt and pepper

  • 1/4 teaspoon powdered ginger

  • 1/4 teaspoon everything bagel seasoning

  • 1/4 cup minced cashews ( for topping)

Method:

  • Heat the griddle

  • Place mushrooms on with the Braggs

  • Add the red pepper and half the soy

  • Turn off griddle and keep warm

  • On a silpat mat on a toaster tray place the dried tofu

  • Add half of the soy sauce

  • Toast on medium heat for 15-20 mins

  • Turn and toast for another 10-15 mins

  • In a medium to low heat pan place the vegetable stock

  • Add the miso paste

  • Stir to combined

  • Remove from heat

  • Add the mushrooms to the miso and veg stock

  • Add the red pepper to the miso and veg stock

  • Add the tofu to the miso and veg stock

  • Add the chopped green onions

  • Boil a pot of water

  • Drop the rice noodles in for 5-10 mins

  • Drain

  • Season noodles with everything bagel

  • Add powdered ginger

  • Add salt and pepper, taste and adjust

  • Serve in bowl topped with minced cashews
