Attitude of Gratitude - Vegan Tortilla Recipe

Since we’ve been leaning toward more of a vegan lifestyle in our little cottage, it’s been fun to try out new recipes and use lots more spices, herbs and to create sauces with our various recipes. We are flourishing, losing weight, clearing up skin, healing baggy aging bodies and so much more. Basically we are feeling pretty darned good and the food is yummy. This is one of our delicious recipes, and we are full and satiated from it, so that really helps make it a huge success…………….

Ingredients:

  • 4 small flour tortillas

  • 6 vegan sausage patties

  • 1/4 onion chopped small

  • 1/2 cup fresh cilantro chopped small

  • 1 1/2 cup romaine lettuce chiffonade

  • 1/2 cup arugula

  • 1 small avocado

  • salt and pepper to taste

  • 2 Tablespoons lemon juice

  • *Vegan Nacho cheese sprinkled to taste

  • Pineapple Jabanero sauce to taste (Costco’s)

Method:

  • Cook vegan sausage patties on the griddle

  • Turn so that each side gets cooked

  • Heat tortillas on griddle on each side

  • Cut 1 1/2 vegan sausage patties per tortilla

  • Plate and stuff all the chopped ingredients into tortilla

Serve & ENJOY!!!
