Loved, Cherished, Accepted - Agave Chai Cake Recipe

Every year around the September time, my mum would bake cakes for the Jewish New Year to make it a sweet year. She made honey cakes and they were really good. People in her life who weren’t celebrating received a cake too. I loved her recipe almost as much as I will always love her, and I’ve adapted this cake recipe for Vegans………………

Ingredients:

  • 2 1/2 cups coconut flour

  • 2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon xanthum gum powder

  • 1 1/2 cups coconut sugar

  • 1/2 teaspoon salt

  • 1 3/4 cups hot water

  • 1 cup instant chai powder

  • 1/2 cup agave nectar

  • 1 cup cashew butter

  • 1/2 cup oat milk with 1/4 teaspoon lemon juice

  • 2 cups chia seeds with oat milk OR

  • 1 ripe banana with 1 cup oat milk

Method:

  • Heat oven to 350

  • Mix hot water and instant Chai until combined

  • Mix flour and chia seed mix or banana milk mix

  • Add sugar, baking soda, baking powder, xanthum gum, salt

  • Add Chai mix

  • Whisk in the agave

  • Add the butter milk

  • Add cashew butter

  • Pour into silpat lined cake tin

  • Bake on 350 for 25 mins or until golden

  • Serve warm or cool.
