Special and Unique - Vegan Quesadillas Recipe
Making delicious and organic Vegan food has become a joy and an important part of our every day cottage life here on Maui.
This recipe is easy and so good for us, while being enjoyable and satisfying.
Ingredients:
1 Avocado, cut and sliced
1/2 Onion, chopped
1/2 cup Mushrooms, chopped
6-8 cherry tomatoes, halved
1/2 yellow pepper, sliced thin
1/4 cup organic sweet corn
1/4 cup Vegan parmesan shake (Pecan Mix)
3 Tablespoons Vegan Nacho Cheese (Cashew mix)
1-2 cups lettuce chopped small
1/2 cup cilantro, minced
4 Flour Tortillas
1/4 cup refried beans
salt and pepper to taste
2 teaspoons lemon juice
1/2 cup white wine
1/4 cup vegetable stock
Method:
Heat griddle medium to high
Drop stock on it
Add salt and pepper
Add onions
Add mushrooms
Add yellow pepper
Add corn
Add white wine and reduce
Remove and set aside
Add tortillas to golden on one side
Turn tortillas
Fill tortillas with mix
Sprinkle with cashew parmesan on each
Dot nacho cheese on each
sprinkle lemon juice, salt and pepper onto avocado
Fold and serve with Avocado on top
