Giggle - Griddle Muffins Recipe

I made muffins and then my darling man asked me what would happen if I made them a little more of a wet muffin and placed them on the griddle, flattened them and made them into sort of really healthy, fiber rich pancake with that lovely char. I thought why not and here they are……

Ingredients:

  • 1 cup oat flour ground

  • 1 cup oats

  • 1 cup gluten free flour

  • 1/4 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon xanthium gum

  • 1/4 teaspoon salt

  • 1 cup coconut sugar

  • 1/2 cup raisins

  • 1/2 cup cranberries

  • 1/2 cup seeds plus 2 Tablespoons for topping (Costco salad topper)

  • 2 oranges, zested & peeled and cut small

  • 1/2 cup pineapple cut small

  • 1/2 cup orange juice

  • 2 Tablespoons vanilla

  • 2 tablespoons agave nectar (plus a little on top to serve if desired)

Method:

  • Throw it all in a mixer to fully combine

  • Remove and chill

  • Keep chilled until ready to use

  • Take a heaping Tablespoon full of mix

  • Flatten to good size round on the griddle

  • Place on the griddle with seed to top

  • Turn over and top with seeds on other side

  • Flatten again to cook

  • Once fully browned and cooked remove and serve warm

  • You can pour a little extra agave on top if desired
