Love You - Vegan Quiche Recipe

I love quiche and was really missing it when our little cottage chose to become more mindful of our dietary habits. We are mostly vegan in our daily intake and this is a delicious, healthy and close to the real thing recipe for quiche………

Ingredients:

Crust Base:

  • 1 packet of rice crackers

  • 1/2 cup Chia seeds

  • 1/2 cup water

  • salt and pepper to taste

  • 1/2 cup minced cilantro

Quiche filling:

  • 1 large onion, chopped small

  • 1/4 cup cilantro, minced

  • salt and pepper to taste

  • 1/4 cup vegetable stock

  • 1/4 cup white wine

  • 8 cherry tomatoes, halved

  • 2 cups spinach, stems removed

  • 1 cup mushrooms, chopped small

  • 2 cloves garlic, minced

  • Tofu, dried, seasoned and toasted very lightly

  • 1 cup oat milk

  • 1 cup coconut flour

  • * 1/2 cup cashew parmesan

  • * 1/2 cup nacho cheese

Method:

  • Process crust base ingredients to combine

  • Press crust base into lined dish

  • Bake at 350 for 15 mins to golden

  • Remove and cool

  • On a griddle, heat vegetable stock

  • Add onions - cook to golden

  • Add salt and pepper

  • Add mushrooms - cook to golden

  • Add white wine and reduce

  • Add minced cilantro

  • Add garlic

  • Remove and set aside

  • Take well dried tofu and bake for 15 - 20 mins in toaster oven - not too toasted

  • cool tofu

  • In processor add tofu

  • Add coconut flour

  • Add oat milk

  • Process to combine

  • Add nacho cheese

  • Layer onion mix and tofu mix onto quiche crust base

  • Add tomatoes

  • Add cashew parmesan, sprinkling onto tomatoes

  • Bake at 350 for 20-30 mins to golden and firm

  • Serve warm or cold
