Layers of Surprise Salad

This is a composed and deliciously easy, light salad. There are many layers, and this can be vegan, vegetarian or with fish or meat. You get to choose. The dressing is light and has a great sticky consistency. Every layer has been seasoned, sliced thin and is easy to eat. If you don’t dress the salad, and make loads, it will keep for a couple of days. We eat it up quickly and it doesn’t get saved, so we dress ours. I really like this salad. It is almost posh. 

SALAD INGREDIENTS

  • 1 cup cabbage sliced thin

  • 1 carrot sliced thin

  • 1/2 onion sliced thin

  • 1 can of mandarins

  • 1 packet of skinny rice noodles, cooked in boiled water for 2 minutes, drained, cut shorter and cooled in the fridge

  • 1 cup blueberries, drizzled with 1 Tablespoon of balsamic

  • 1/2 cup minced cilantro

  • 1 ripe avocado, sliced thin, seasoned with 1 Tablespoon Lime juice

  • salt and pepper

  • 1/2 cup minced parsley

  • ** cooked, seasoned shrimp, or tofu, or roasted vegetables of choice

  • 1/2 cup chopped cashews

 DRESSING

  •  Juice of canned mandarins

  • 1 cup olive oil

  • 1/4 cup sesame seed oil

  • 1/3 cup sesame seeds

  • 1/2 cup pineapple juice

  • 1/4 cup soy or Tahini sauce

  • 1 Tablespoon Agave

  • 3 Tablespoons Balsamic Vinaigrette

DRESSING METHOD

 Take a shakeable container, preferably with a small nose so it can be drizzled and not simply poured in a large dose. Mix thoroughly, taste to make sure it’s nutty, sweet and tangy, balanced and delicious, and shake before each serve. 

SALAD METHOD

  •  Slice all your fresh ingredients and hold in cold covered dishes until ready to serve. (open the canned mandarins, placing them in a small dish.  Place the juice in a dressing container to be shaken with all the other ingredients later.)

  • Compose salad layering each ingredient evenly, while shaking and drizzling the dressing lightly on each to a gentle shine.

  • Finish with chopped cashews on top. Serve.
