Easy Veggie Yummy Pie Recipe

I am going to admit here that I love making this and you can totally taste the love and care in every bite.

 It’s easy, quick and very effective.

You can make a personal pie like the one in the photo or a large family sharing style. Either way, it’s fun and tastes yummy.

Get creative and make this your way……..let me know what you did to make this pie recipe your own.

 Ingredients:

  •  Several (12-20) Filo dough sheets, refrigerated on a plate.

  • 1/2 cup butter, softened plus 2 Tablespoons for greasing the dish

  • 2 -3 Tablespoons olive oil

  • 1 cup thinly sliced onions

  • 1 cup sliced mushrooms

  • 1 cup sliced green peppers

  • 1/2 cup celery, sliced thin

  • 1 cup mozzarella  cheese

  • 1 cup parmesan cheese

  • salt and pepper to taste

  • 1 cup minced parsley

Method:

  •  First, take a dish and grease it with the extra 2 Tablespoons of butter.

  • Then line the dish with several sheets of the filo dough to cover the whole bottom of the dish with at least a couple of layers of the dough. add blobs of butter, a pinch of each of salt, pepper and minced parsley.

  • Bake the dough, on 325 for 20-30 mins (depending on your oven)

  • While that’s baking, take a good size saute pan and place the olive oil in it with salt, pepper and 1/2 the minced parsley.

  • Add the onion, brown a little and then add the celery, brown more and add the mushrooms. Add the green peppers.

  • Remove and cool the dish with the now brown filo pastry in it. Add 1/2 cup of each of the mozzarella and the parmesan cheese.

  • Add the sautéed veggies.

  •  This is where you can add……….Fish, meat, boiled and sautéed potato or any root vegetable

  •  Add the rest of the cheese.

  • Top the pie with more filo dough and more blobs of butter, salt, pepper and minced parsley.

  • Bake in a preheated oven at 325 F for 10 to 15 min (15 to 20 min if refrigerated) when ready to serve.

This is a great hit with everyone that I have served it to and it is a real time saver if you have them prepared ahead of time.
