Easy Homemade Sushi

It’s easier than it looks. I am sharing my recipe and what I love is that you can create your own version……

 This recipe is leaning toward Vegan. What I love about it though, is it can be made Vegan, Vegetarian or with meat or fish. You get to be really creative and if you want tips for the meat or fish versions, please ask me and I will be happy to share ideas. 

Ingredients:

  •  2 cups of rice.

  • 4 cups of water.

  • Lemon juice squeezed from 1 lemon.

  • Avocado, seasoned with salt, pepper, lemon juice.

  • 1/2 cup shredded carrot, seasoned with salt, pepper.

  • 1/2 cucumber, sliced thin and halved.

  • 1 - 2 celery sliced very thin, seasoned with salt, pepper.

  • precooked beans, white, garbanzo and kidney, seasoned with salt, pepper.

  • vegan mayo mixed with seasoned grilled vegetables, such as zucchini, squash, sliced thin.

  • Sheets of nori chilled, with everything else, ready to roll.

 Method

  •  First - each of your components are going to be placed in dishes in the fridge, ready to roll within the rice.

  • Then we need to boil the rice, in my case I use a instant pot which I adore. In my instant pot I take 2 cups of calories (sushi) rice with 4 cups of water. Drain, and spread rice out on a tray.

  •  Then take a rice rolling sushi mat and place in a tray, cover the mat with a layer of plastic wrap, then the fun begins.

  • Place the nori on the plastic wrap, spread a thin layer of rice to halfway on the nori.

  • Then add all your fixings in a sausage shape.

  • Roll tightly.

  • Then refrigerate.

  • Start again.

  • Place in the fridge until ready to use. then take out, slice quickly with a good sharp knife and serve. Yum!
