 Leap Ahead - Fish in Filo Recipe

I love being a Vegetarian with Pescatarian tendencies. It means I am mostly veggie and plant based, with fresh, delicious fish on the menu at least once a week. This recipe is easy and tasty and you can shift it to be made with only veggies or with meat. This base recipe for two people is really versatile.

 Ingredients:

  •  2 pieces of 4-6 oz fish ( I love salmon or mahi mahi)

  • jalapeno salt to taste

  • lemon pepper to taste

  • 2 tablespoons minced cilantro to sprinkle on each side of fish

  • 1 tablespoon minced cilantro for mushrooms/onions

  • 2 sprigs mint for garnish

  • 1/4 cup white wine for the fish

  • 1/4 cup white wine for the mushrooms/onions

  • 1/2 cup minced mushrooms

  • 1/2 cup minced onions

  • Olive oil for griddle

  • Several sheets of filo dough

  • Everything bagel seasoning to taste

  • 1/2 cup smart balance butter

  • 1/2 cup spinach sliced and seasoned with salt and pepper

 

Method:

  •  Take small dishes and line with butter

  • Place several sheets of filo dough to make a base

  • Layer each sheet of filo with butter blobs and everything bagel seasoning

  • Bake off ( I use my toaster oven because it’s fast and uses less energy) 350 for 15 minutes

  • Until golden brown

  • Remove and cool

  • Heat the griddle medium to high and sprinkle olive oil on

  • Cook the mushrooms, onions with salt, pepper and add the white wine

  • once the onions and mushrooms are almost done - add the cilantro

  • Remove the golden mushrooms and onions and set aside to cool

  • Sprinkle more olive oil on the griddle and place the fish

  • Season with salt, pepper and sprinkle with cilantro

  • Add white wine - brown (don’t cook long) needs to be underdone

  • Turn fish and sprinkle salt, pepper, and add white wine again

  • Remove so that it’s underdone

  • Set aside

  • Add the sliced spinach to the filo dough base

  • Place the mushroom and onion mix on top of the spinach

  • Add the fish

  • Cover the fish with more sheets of filo, blobs of butter and everything bagel seasoning.

  • Bake 350 for 15-20 mins to golden - when ready to serve with a spinach salad and sesame dressing ( I like Costco’s)
