“Choices” - Build Your Own Nachos

This can be a snack or a whole meal. This is almost too good. We often build our own Nachos, with what we have in our cupboards and fridge. You can be really creative or place all the ingredients in individual bowls and allow friends, loved ones or guests to create their own plate.

Of course you can easily make these vegan (with vegan cheese) and gluten free is also easily accomplished. You can add already cooked meat, fish or tofu as well.

 Ingredients:

  •  2-3 cups of corn chips (or chips of choice - not potato chips)

  • 1/2 cup refried beans

  • 1/4 cup sour cream

  • 1/4 cup salsa

  • 1/2 avocado

  • 2-3 Tablespoons of chopped onion

  • 1/2 cup chopped fresh tomatoes

  • 1/4 cup thinly sliced fresh cabbage

  • 1/2 cup thinly sliced lettuce

  • 3/4 cup mixed grated cheddar cheese (strong to mild)

  • 1/2 cup grated mozzarella cheese

 Method:

  •  So easy - its fun!

  • Place the chips and cheese with beans in layers.

  • Place in the microwave 2-3 minutes or toaster oven on 350 for 10 minutes

  • Add all the other ingredients and serve this colorful dish.
