Rolling Into Summer - Vietnamese Style

I have always loved Asian Cuisine, from Thailand, Vietnam, to China and Japan! One of my new favorites to make in our home is Vietnamese Summer Rolls. They are so fresh and delightful that they are a real crowd pleaser. There are a lot of ingredients, however, the best thing about them is how insanely easy they are to make!!

We recently had a dinner party in our little neighborhood community and what a fun night it was!! All of the ingredients were prepared and placed in separate dishes on two tables, one classified as “Vegan” and the other classified as “Do What You Want”. After a bit of initial instruction from a beautiful person, native to Vietnam, we all set forth on our”Summer Roll Adventure”! I have to say that this was a blast! Not only are you eating fresh, healthy ingredients that are absolutely great for your body, you are creating so much joy in the process of making your own masterpieces! We had so much fun and great conversations occurred throughout the evening. I have to warn you though, you don’t really realize how much food you are eating. Suddenly your bell is much fuller than you could have imagined, because of the compact nature of the roll you are tightly turning to seal all of the goodies inside!!

Ingredients: Vegan Friendly

  • rice paper (square or round, it does not matter)

  • roasted seaweed sheets (small snack size)

  • toasted sesame seeds

  • cabbage shredded fine like little strands of hair

  • leaf lettuce ripped into bite sized pieces

  • carrots - shredded

  • cucumber sliced very thin

  • zucchini in long julien cuts

  • cilantro - tender stems attached

  • thai basil leafs - separated from stem

  • seaweed salad (we bought this already prepared)

  • Optional ingredients: protein sources

    • baked tofu

    • hemp seeds

    • crushed peanuts

    • shaved coconut

Omnivore Ingredients:

  • Shrimp

  • Fish of choice (Mahi Mahi, Ono, Salman, Cod…)

  • Tender strips of lean beef

  • BBQ pork in thin slices

  • Chicken breast - pulled apart into thread-like pieces

Method:

  • place filtered water in a shallow pan or cake tin

  • place rice paper in the shallow tin to fully submerge it in the water. Remove quickly and let the excess water run off

  • set wet rice paper on a plate for filling and rolling one piece for smaller rolls, two overlapping for larger sized rolls

  • sprinkle sesame seeds evenly on the rice paper

  • lay 2 to 3 sheets of roasted seaweed onto the sesame seeds

  • place all other desired ingredients in a long “poo” shape on the seaweed close to you for rolling

  • start to roll and tighten, bringing the sides in as you roll

  • Dip, Eat, Enjoy!!

Ingredients: Peanut Sauce

  • 1/3 cup creamy peanut butter

  • 2 TBSP Hoisin Sauce

  • 1 tsp sesame oil

  • 1/2 cup canned coconut milk

  • 1/2 tsp garlic powder

  • 1/2 tsp red pepper flakes (sriracha, or chili paste works great here as well)

  • 1/2 cup chopped peanuts

Method:

  • Combine all ingredients in a small saucepan on low heat until smooth

  • Separate into dipping dishes and top with chopped peanuts

  • Serve alongside store bought sweet chili sauce and chinese hot mustard
