I love creamy sauces and my darling man and I have been finding healthier alternatives to the rich foods we love. This is a great find and quite easy to create. I used this recipe on a couscous  with a side salad, using lettuce, alfalfa sprouts, avocado and a lemon white wine vinegar honey vinaigrette. You can pour this over a simple baked potato or on a piece of fish or meat. It’s really good, vegan with no dairy or oils.

Ingredients:

• 1 packet of fresh mushrooms, sliced

• 1/2 onion sliced and chopped small

  1 cube vegetable stock mixed with 1/2 cup water

• 1 can coconut milk straight from the fridge

• salt and pepper to taste

• 1/4 cup cilantro

• 1 Tablespoon Italian dried herbs

• Sprinkle of ground mushroom Umami

• 1/2 cup white wine

Method:

•  Place the mushrooms and onion in a pan

• Add 1/2 of the veg stock and water

• Add the salt and pepper

• Add the Italian dried herbs

• Add the ground mushroom Umami

• Keep turning the product in the pan

• Once golden, fragrant and liquid is gone

• Add 1/2 cup white wine and reduce

• Once liquid is gone, add the rest of the stock

• Once drier add the coconut milk

• Add the herbs and a little salt and pepper

• Thicken and taste

• Refrigerate to use later or cook other ingredients to pour sauce over.
