Shiny and New - Cracker Recipe
I love these vegan crackers. You have to roll them out really thin so that they’re crunchy and then with a fresh organic apple and non-dairy butter sprinkled with everything but the bagel seasoning, they’re amazing.
Ingredients:
1 cup chia seeds
2 cups water
1 cup of salad topper (Costco’s is yummy)
1/4 cup raisins
1 Tablespoon sea salt
1 Tablespoon minced herbs (cilantro is great)
2 Tablespoons ground flax seed
Non-dairy butter in a ramekin
sprinkles of everything but the bagel seasoning
1 apple sliced and sprinkled with lemon juice
Method:
Bloom the chia seeds in water overnight, covered in a cool spot.
It should be goopy - not too firm and not too wet, quite slimey.
Once bloomed add all the other ingredients.
Roll out between parchment to very thin.
Bake at 350 for 10-12 mins until golden.
Flip crackers over and bake the other side for the same amount.
The crackers should be dry and crisp.
Cut and place in an airtight container until service.
Serve with the seasoned non-dairy butter and sliced apple.
