Buttery Berry Bliss Bar
Can I just say……Oh Yeah!! To this very berry recipe. It’s a great breakfast food, a great snack or picnic friend. You can make this sugar free and gluten free simply by adapting the ingredients a little.
Please ask me how if you need help with any adaption. It’s really easy.
Ingredients:
Crumble:
2 cups oats
1 1/2 cups All Purpose Flour
1 cup brown sugar
1 tsp baking powder
1/2 tsp ground cinnamon
1 cup salted butter
Filling:
2 1/2 cups berries
2 -4 Tblsp sugar
2 Tblsp All Purpose Flour
2 tsp vanilla essence
2 tsp lemon zest
1/2 cup berry jam
Method:
warm oven to 350.
Line 9”x13” tin/dish with parchment.
Crumble:
Pulse oats, flour, brown sugar, cinnamon and baking powder.
Add cold butter and pulse to crumble.
Press 1/3 of the dough into the dish.
Transfer to the oven and bake for 10 minutes to golden.
Filling:
Toss the berries, sugar, flour, vanilla, and zest to spread over the crust.
Drop jam over it.
Sprinkle the dough over the berries.
Return to the oven.
Bake 30-40 minutes.
Cool.
Cut into bars.
This will keep and can be stored for up to 1 week in a closed container at room temperature.
While this bar won’t stay around for long, the bliss that you get from eating these incredible “Buttery Berry Bliss Bars” will last for much longer!!.
