Delicious Guilt Free Cinnamon Rolls

Cinnamon roll recipe

Ingredients

1 cup of warm milk ( you can use alternatives to cows milk)

1/2 cup sugar ( this is where I use monk fruit)

1 Tablespoon active dry yeast

2 large eggs (room temp)

6 Tablespoons of Butter (melted)

1 teaspoon of sea salt

1 teaspoon of ground cinnamon

Method

Prepare 2 bowls and a baking tray with a silpat or non stick cover on it.

Warm milk (don’t make it hot) and add 1 Tablespoon of sugar, 1 Tablespoon of the yeast. Stir and let it sit for 5 minutes to foamy.

In the 2nd bowl add 4 cups of flour, salt and cinnamon.

Now add the 1/2 cup sugar, butter, eggs, vanilla to the milk and yeast. Gently combine the flour and mix it into the liquids in 3 stages to combine. The dough should be tacky but not wet. If it is - add a little more flour. Flour a board or counter in my case, transfer dough ball to the floured surface and knead for 3-5 minutes. It should have a little bounce. Place in a greased bowl with enough room to rise. Cover it with a damp warm cloth and place in a warm spot. Allow an hour for it to double. Prepare melted butter and a brush. Create a monk fruit sugar and cinnamon mix. Roll out dough into a large rectangle. Brush with the melted butter and sprinkle with the cinnamon monk fruit sugar mix. As you roll the dough, brush the butter and sprinkle the cinnamon monk fruit sugar mix. Keep rolling, brushing and sprinkling until it’s a nice big roll, with layers you can easily see of cinnamon and sugar. Cut thick rounds from the roll.

Prepare the ones you wish to bake onto the prepared tray, and you can seal and freeze the ones you wish to save. If you wish to bake the prepared tray immediately, place in a warm spot and allow to rise for 30 minutes. Then bake at 350 for 30 minutes (ovens may vary - especially if fan assisted - they’ll be much quicker). I serve mine freshly baked with stevia syrup. You can use the powdered version of monk fruit and mix with water to create a glaze. You can also add sweet nuts by cooking them in a pan of monk fruit and butter until golden brown. These are really yummy!!!
